  1. I love this. I usually start so well with meal plans and then, when the day hits, I have no desire to cook. I wish I weren't so exhausted after the work day.

    1. My meal plans don't always go as planned for the same reason! I do find that as long as I stick to extremely simple food it's not as hard to motivate, so most everything can be done in the oven or microwave without much attention required. I also try to take a half hour or so on Sunday to wash and prep veggies for the week to avoid taking that step every night, and when I make starches like rice I always do extra so I can just heat them up for another meal later in the week.
