Buttery Baked Chicken

This isn't really a recipe so much as a method of making delicious chicken with virtually no prep.  It takes just a minute to put together and a half hour in the oven, and it comes out nice and moist since the butter coats the chicken while baking.  I made it one night last week when Hubs was out and I had zero motivation to be in the kitchen, and the results were so tasty that I repeated it again this week!    

Buttery Baked Chicken

  • 2 boneless skinless chicken breasts
  • 2 tbsp butter
  • Seasoning blend of choice (I used lemon pepper)


Preheat oven to 425 degrees.

Coat chicken on both sides with the seasoning blend and place in a baking dish.  Top each chicken breast with 1 tablespoon of butter.

Bake for 30 minutes, or until internal temperature reaches 160 degrees.  Let rest for 5 minutes before serving.
