Spoonful Sunday: Slow Cooker Week

During the summer months, my slow cooker usually just gathers dust as I tend to plan meals on the grill.  As the weather cools off, it tends to get a lot more use.  This year I have even more reasons to use it thanks to Ginger Lemon Girl’s new Gluten-Free Slow Cooker Cookbook!

I had the pleasure of meeting Carrie at the recent Gluten-Free Expo here in Raleigh, and preordered her cookbook that very evening.  It arrived a few weeks ago, full of delicious-sounding recipes and a variety of dishes I had no idea I could even make in a slow cooker, like hamburgers.

I sat down today and picked out some recipes to try this week.  It was hard to narrow it down, but I decided to stick to recipes that used what I already have around the house.  Hubs and I already put one of them together, the Basic Beef Stew, and it’s currently making my house smell divine Smile

Here’s the lineup of what I’ve chosen:

  • Basic Beef Stew (p. 127)
  • Balsamic Almonds (p. 76)
  • Hawaiian Chicken (p. 174)
  • Salsa Chicken (p. 250)
  • Barbecue Chicken (p. 170)
  • Maple Pumpkin Spice Lattes (p. 278)

It’s heavy on the chicken, I know, but I’ve got a huge bag of boneless skinless chicken breasts in my freezer to use up.

The Everything Gluten-Free Slow Cooker Cookbook has a 5-star rating on Amazon and features appetizers to desserts and everything in between, plus gluten-free diet and slow cooker tips. I can’t wait to see how these recipes turn out!
