Meal Plan Monday

Meal PlanI’ve seen a lot of bloggers posting their weekly meal plans, so I thought I’d get in on the action and start sharing mine each week on my new Meal Plan Mondays!

I make a point of sitting down to plan meals for the upcoming week on Sundays.  Planning not only makes it easier during the week to get good meals on the table without stressing about it, it also gives me a chance to evaluate what I have on hand and make sure we’re eating all the fresh food and leftovers to minimize food waste. 

Some weeks I feel adventurous and want to try out new recipes, while others I just stick to meals that are easy to assemble using what I already have in the fridge, pantry and freezer.  This was one of those weeks…

Monday

  • Leftover grilled London broil
  • Mashed potatoes
  • Green beans

Tuesday

  • Roast chicken with lemon & rosemary
  • Honey glazed carrots
  • Gluten-free cornbread muffins

Wednesday

Thursday

  • Shrimp stir fry
  • Rice noodles

Friday

Saturday

  • Fajita steak, peppers and onions
  • Leftover Mexican rice

Sunday

  • Chicken sausage
  • Yellow rice
  • Broccoli
