Cheese Pizza Quesadillas

083012 - 1I was trying to come up with creative ways to use up the rest of my roasted tomato sauce without having to go to a ton of effort, then I spotted the Rudi’s gluten-free tortillas in my fridge and had a minor epiphany – why not make a cheese pizza quesadilla?

I love cheese quesadillas, and practically lived off them in college along with all that Easy Mac.  1 minute of prep, a few minutes in a hot skillet, big glob of salsa and it’s a pretty complete and simple meal.  Pizza has always been a favorite too, so why have I not combined the two before?

I’ve heard of tortilla pizzas, but thought they looked a little difficult to pick up and eat since tortillas are so thin.  Not so with quesadillas!  The second tortilla makes them the perfect finger food.

It was absolutely delicious – all the flavors of a gooey, cheesy thin-crust pizza done in just a few minutes in a skillet.  You could easily add your favorite pizza toppings as long as you slice them thinly.  I have plans to try a Hawaiian or BBQ pizza version next…

Cheese Pizza Quesadillas

Ingredients

  • 2 Rudi’s gluten-free flour tortillas
  • 2-3  tbsp tomato sauce
  • 2 oz shredded mozzarella cheese

Directions

Preheat a medium skillet over medium-high heat.  Spray with cooking spray.

Lay a tortilla out on the cutting board and top it with the sauce and cheese like a pizza.  Add a second tortilla on top and add to the hot skillet.  Flip after about 3-4 minutes, or once the bottom tortilla is golden, and cook the other side for the same amount of time.

Slice into wedges and serve immediately.
