Gluten-Free Friday: Pamela’s Oatmeal Raisin Cookies

Today I’m featuring a new treat from our last trip to Whole Foods.  We were craving cookies, so I grabbed a box of the Pamela’s Old Fashioned Raisin Walnut Cookies that were on sale - I have yet to come across any baking mix from Pamela’s Products that we haven’t liked so I figured they’d be good.

We eagerly dove into them after dinner that night, but were both a little confused at the texture.  They were very light and crumbly - much closer to muffin tops than cookies in terms of density.  They tasted great, but it was not at all what we were expecting.  However, the crumbly texture gave me the idea that it would be a great topping, and I ended up with a delicious quick dessert!

Five Minute Gluten-Free Strawberry Delight

Serves 2


  • 2 Pamela’s Raisin Walnut Cookies (or GF cookie of choice)
  • 8-10 medium strawberries
  • 1/2 cup heavy whipping cream
  • 1/2 tbsp powdered sugar
  • Dash of cinnamon


Add powdered sugar and cinnamon to the whipping cream and whip – you can use an electric mixer for this, I use my Magic Bullet because it’s so convenient.  You could also whip by hand if you don’t have an electric option, but the dessert might not live up to the five-minute title!

Slice strawberries and distribute between two bowls.  Crumble one cookie into each bowl, and top with the cinnamon whipped cream.

The texture worked perfectly with the whipped cream and berries, and the combination of flavors was terrific.  Plus, the fiber and antioxidants in the berries counter out all the fat and calories in the cookies and cream – at least that’s the way I like to look at it Smile
