Some nights I’m excited to get in the kitchen and prepare a meal, particularly if I’ve got something on the menu I’ve been craving. Other nights, the last thing I want to do is cook, but I know I need to get something on the table. Here is my go-to recipe for those nights – a few minutes of prep and the oven does the rest of the work!
It is so easy it doesn’t really even need a recipe, you just season the legs and bake them off. I use Trader Joe’s 21 Seasoning Salute because it’s really tasty and only $1.99, but there are lots of options in any grocery store for seasoning blends, just pick what sounds good.
Easy Baked Chicken Legs
Serves 4
Ingredients
- 8 chicken legs
- Trader Joe’s 21 Seasoning Salute (or your favorite seasoning mix)
Directions
Preheat oven to 425 degrees and line a cookie sheet with nonstick foil (if you don’t have nonstick, use regular and add a quick coat of cooking spray).
Dry off the legs with paper towels – this is an important step to get crispy skin without adding any fat. Season both sides with the seasoning blend and arrange on the cookie sheet skin-side up. Bake for 45 minutes.
For sides, I usually stick to good ol’ frozen Ore-Ida potato products since I’ve got the oven going already, and nuke whatever veggies I have in the crisper or freezer. And in a sum total of about five minutes of actual effort on your part in the kitchen, dinner is served!
I love cooking chicken legs because they are so easy to portion out and serve, and they are cheap – it’s not even that far of a stretch to pay organic prices, particularly if you can find a special. Plus you get that yummy Sunday-chicken smell in your house without having to take the time or effort to roast an entire bird ![]()
